Inside the Chef's Table: Seasonal Menus from Our Garden

· Dining

Our head chef on cooking with what the garden and the fishermen bring in each morning. Here is what our team recommends, gathered from years of looking after guests who come back season after season.

Start slowly

There is no schedule at Sentinel unless you want one. Breakfast is served until eleven, the pool opens at sunrise and your butler can rearrange the day whenever the weather or your mood changes.

Most guests find that the first day is for arriving and the second is for unwinding. By the third, the island has set the pace: early mornings, long lunches and evenings that end with a walk along the sand.

Ask at reception for the day's tide times and our hand-drawn map of the coast. The quiet coves to the north are best reached by kayak at high tide, and the reef just off the point is ideal for snorkelling before the afternoon breeze picks up.

In the late afternoon, the terrace bar fills with the smell of the evening barbecue. Book a table at the water's edge and order whatever the fishermen brought in that morning.

Make it yours

Everything here can be arranged around you: a private breakfast on the sandbank, a cooking class with our chef, a longtail boat to an empty beach. Just ask, ideally the day before.

We look forward to welcoming you to Sentinel.
